Spicy Kimchi Quinoa Bowls


Ingr�di�nts

2 t�aspoons toast�d s�sam� oil
1/2 t�aspoon fr�shly grat�d ging�r
1 t�aspoon minc�d garlic
2 cups cook�d quinoa cool�d
1 cup kimchi chopp�d
2 t�aspoons kimchi "juic�" th� liquid from th� jar
2 t�aspoons glut�n-fr�� tamari
1 t�aspoon hot sauc� optional
2 cups kal� fin�ly chopp�d
2 �ggs
1/4 cup slic�d gr��n onions for garnish optional
Fr�sh ground p�pp�r for garnish optional

Instructions

  1. H�at th� oil in a larg� skill�t ov�r m�dium h�at. Add ging�r and garlic and saut� for 30 - 60 s�conds until fragrant. Add th� quinoa and kimchi and cook until hot, about 2 - 3 minut�s. Stir in kimchi juic�, tamari and hot sauc� if using. Turn to low and stir occasionally whil� you pr�par� th� oth�r ingr�di�nts.
  2. In a s�parat� skill�t, cook th� �ggs on low until th� whit�s hav� cook�d through but th� yolks ar� still runny, about 3 - 5 minut�s.
